Vegetarian Foods - Textured Vegetable Protein (TVP)Textured vegetable protein is basically defatted soy flour which has been processed and dried to give a substance with a sponge-like texture which may be flavored to resemble meat. It may be purchased either unflavored or flavored to resemble meat. Textured vegetable protein is prepared simply by mixing with water or stock and leaving to stand for a few minutes, after which it may be incorporated into recipes as a meat substitute. TVP is a good source of fiber and a high quality protein, Textured vegetable protein is often fortified with vitamin B12. Note: Sometimes, TVP may have a rather high fat content, so check the label.
