Vegetarian Healthy Diet Program - VEGETARIAN DIET RECIPES

Bread and Butter Savoury

Recipe Ingredients

1.5 cups shredded strong Cheddar-type cheese
1/4 cup butter
1 bunch scallions, sliced
1/2 cup mushrooms
6 slices whole wheat bread, crusts removed
2 eggs
2 cups low-fat milk
salt and pepper

Cooking Instructions

1. Grease a 1.5 quart ovenproof dish with a little of the butter.

2. Melt the remaining butter or margarine in a small pan. Add the scallions, mushrooms and fry over a medium heat, stiring occassionally, until soft.

3. Meanwhile, cut the bread into triangles and place half of them in the base of the dish. Cover with the spring onions and top with half of the shredded cheese.

4. Beat together the eggs and milk and season to taste with salt and pepper. Layer the remaining triangles of bread in the dish and carefully pour over the milk mixture. Leave to soak for 15-20 minutes.

5. Sprinkle the remaining cheese over the soaked bread. Bake in preheated oven, 375F for 35-40 minutes, until puffed up and golden brown. Serve immediately.

VARIATION
You can vary the vegetables used in this savoury bake, depending on what you have to hand. Shallots, mushrooms or tomatoes are all suitable.
