Vegetarian Healthy Diet Program - VEGETARIAN DIET RECIPES

Bean Burritos

Recipe Ingredients

For the salsa:
1 small onion, chopped
10 ounces diced tomatoes, drained
2 cloves garlic, minced
1/2 jalapeño chili pepper, seeded
2 tablespoons chopped, fresh cilantro
2/3 cup water
salt
ground black pepper
1/4 teaspoon of sugar

For the burritos:
4 flour tortillas
10 ounces beans (black beans, pinto beans or refried beans)
1 cup cooked rice
1/2 cup sour cream, fat-free tablespoon fresh cilantro leaves

Cooking Instructions

SALSA

1. Combine all of the salsa ingredients in a pan. Bring to boiling,
adjust the heat to simmer and cook until 1/2 of the liquid evaporates,
about 15 minutes. Turn off the heat and allow to cool.

2. Pour the mixture into a blender and puree. Chill. (This can be made in advance and stored in the refrigerator for up to 1 week.)

BURRITOS

1. Preheat the oven to 350°F.

2. Wrap the tortillas in foil and warm them in the oven for about 10
minutes.

3. Heat the beans and rice separately in the microwave.

4. Create burritos by combining rice, beans, salsa and sour cream, in
tortilla. Garnish with extra salsa and sour cream.
