Vegetarian Healthy Diet Program - VEGETARIAN DIET RECIPES

Pumpkin Soup

Recipe Ingredients

2 1/2 pounds pumkin
1.5 ounces/3 tablespoons butter
1 onion, thinly sliced
1 garlic clove, minced
3.5 cups vegetable broth
1/2 teaspoon ground ginger
1 tablespoon lemon juice
3-4 strips of orange rind
1 tablespoon chopped cilantro
1 1/4 cups 1% milk
salt and pepper

TO GARNISH
4-6 tablespoons plain, low-fat yogurt

Cooking Instructions

1. Peel the pumpkin, remove the seeds and then cut the flesh into 1"cubes

2. Melt the butter in a large, heavy-based pan. Add the onion and
garlic and fry over a low heat until soft but not coloured.

3. Add the pumkin and cook with the onion for 2-3 minutes

4. Add the broth and bring to the boil over a medium heat. Season to
taste with salt and pepper and add the ginger, lemon juice, strips of orange rind and cilantro. Cover and simmer over a low heat for about 20 minutes, until the pumkin is tender.

5. Discard the orange rind. Cool the soup slightly, then process in a
blender until smooth. Pour into a clean pan.

6. Add the milk and reheat gently. Add a little more salt and pepper if
you wish. Garnish with a swirl of yogurt and serve.
