Vegetarian Healthy Diet Program - VEGETARIAN DIET RECIPES

Paprika Chips

Recipe Ingredients

2 large potatoes
3 tablespoon olive oil
1/2 teaspoon paprika
salt

Cooking Instructions

1. Using a very sharp knife, slice the potatoes very thinly so that
they are almost transparent. Rinse thoroughly in ice-cold water. Drain the potato slices and pat dry with kitchen paper.

2. Heat the oil in a large skillet and add the paprika, stirring constantly to ensure that that paprika doesn't burn.

3. Add the potato slices to the skillet and cook them in a single layer for about 5 minutes or until they begin to curl slightly at the edges.

4. Remove from the skillet using a slotted spoon and transfer them to
kitchen paper to drain thoroughly.

5. Thread the potato slices on to several wooden kabob skewers.

6. Sprinkle the potato slices with a little salt and cook over a medium hot barbecue or under a medium broiler, turning frequently for 10 minutes, until the potato slices begin to crisp. Serve immediately.

VARIATION
You could use curry powder or any other spice to flavor the chips instead of paprika if you prefer.
